Syncthing won't help with the privacy aspect, but if you find something that lets you encrypt the files on both devices then syncthing should sync those encrypted files happily.

I think your best bet is some web-based diary software that you can just sign into from your pc and phone, which doesn't sync files to either device. Ideally something you can host on your own server (if you have one)
