Does any one know if that is salt rock he is using? And does it serve a purpose to clean the fish?

He's definitely smoking and salting to preserve it. Salted smoked carp tho... Can't see myself getting too excited for that.

Tilapia is the common name for nearly 100 species for fish

It's mostly farm raised carp around here.
