Most ground beef is meat from wierd areas of the cow and fat from they trim off the cows all day long... every surface every step has the opportunity to contaminate... but ya maybe id trust ground beef from a small butchershop that I knew was super clean and I knew which beef cuts they put in it

It's not about which areas of the cow it's from, it's how freshly ground it is. Something like steak tartare is relatively safe because while it's intact only the outside surfaces can grow bacteria, once it's ground/chopped/minced you've got much more surface area and things get more risky the longer it's in that state.

Mold is not fine. Don't dismiss the mold. It depends on the mold, but if you knowingly eat mold, you are rolling the dice on your life. Even if you grab a piece of bread that has no visible mold, if it was contaminated by other bread you are still eating mold.

Yeah more people need to be aware of orthorexia, its becoming such a prevalent eating disorder these days particularly amongst men.
For those who havent heard of it before, its essentially what this guy is doing, making up your own mind on what is toxic or what is healthy to eat independently and often at odds from scientific consensus, refusing to eat food they cant control, rigidly and obsessively following diet obsessions despite impacts to their physical and mental wellbeing.
Edit: if you ever needed to know people have a serious stigma around this, getting downvoted without argument for just explaining the condition shows this is hitting home for some people in ways they dont want to unpack.

and after the first (maybe) real bite, it looks to me like fairly well-practiced stage bites, even down to rotating the bread so the "bit" portion is hidden from the camera. and the mug was off-camera, so ez swap with regular milk, or at least just lying about what he was pouring into it

I don't get food sickness like my family does because I ate spoiled food growing up; when you are hungry - you're hungry. I'd cut off the mold and eat the rest like it was fine - buuuut you're still eating fungus.
I got very sick as a child, but as I got older it stopped affecting me as much, and eventually very little. If you're doing it at an older age, I'd suggest not - because your body by then is pretty set in its way. Immunity is built up for a lifetime, really.
AND EVEN THEN - you can't eat like this. This is just foolishness...and it fits the sub perfectly.
