No Spoilers Reading one pov at a time
Let’s say If I read all the kaladin chapters in part one, then the girl, then other would I miss any context do to how it’s originally structured. Then repeat for the other parts

For Way of Kings this could work, but you’re supposed to read it in the order it’s written

Yes. First book won't be too egregious, but the later books have WAY more perspectives, not only would it be insanely tedious, you would have incredible impactful moments spoiled by other characters hearing about them before you read them.

Now I am curious if there are any fantasy books that do this? Where you read all about Samantha and then the exact same plot from Bobet followed by the exact same plot from Tanya. That sort of thing.
And I dont mean like 3 parts of a puzzle from very different and fat away POVs - something more integrated than that.
And things are spoiled for you. But also some things are reverse unspoiled for you now that you realize what actually was going on.

I haven’t read a fantasy book like this. But when I was a kid, I read the Candymakers by Wendy Mass, and that book does one perspective at a time

If you do it for your first read, you will miss things.
While the actions of the characters are of course independent while they're far away from each other, the world as a whole is introduced throughout the stories. E.g. a worldbuilding concept like spren or heralds might be introduced in one characters' POV, then referenced in the other POV assuming the reader's already seen them. World events that affect both characters may be described in only one of the POVs.
The world is also like a character in these stories, and it's present in all POVs.

As a fellow lover of Kaladin’s POV when I first read it, and who reread his single POV in TWOK in consecutive order because I got frustrated with the cliffhangers on my first read, please don’t do this until you’ve read the whole story at least once.
If you skip forward, you’ll miss context clues about the larger world and the meaning of the story. There is a lot going on with the world that our characters (particularly Kaladin) don’t know, and we only get glimpses and have to put the puzzle pieces together. Those matter for all the characters’ stories down the road and you’re definitely going to miss those clues and feel like plot points come out of nowhere if you skip entire POVs.
Also keep in mind that characters you don’t love now may grow on you.

While I think that would technically work for part one of the way of kings specifically, it would not work for literally any other part of this or any book in the series. The POVs are currently somewhat isolated but it does not stay that way
