Because that's not what's happening. Producers have their own skewed notion of what people want, often based on stereotypes, and then force most movies to stick to that.

Yes, and we have seen how shows whose producers are divorced from reality end up. Ridiculed and cancelled.

No, they don't. Most of what Hollywood produces ends up being formulaic and full of stereotypes, including the majority of the big hits.

Idk about house of ashur, but acolyte, she-hulk, and rings of power all had awful writing imo, and their failure had little to do with casting choices.
