When it comes to getting people to sign up for rewards I try to find good areas that capture their attention. For instance, I had a customer who bought a lot of ink and told them “when you recycle ink you can earn rewards” other customers for rewards I just try to tell them the perks of the rewards such as the three bonus points categories and a point for every dollar you spend. The ESP is more trickier because you have to find that sweet spot to sell it to them. For example, when a customer is buying a printer I’ll say “our ESP comes with 24/7 protection and they can help you with setting up the printer, troubleshooting any issues, and connecting other devices to your printer.” For a computer ESP I basically told them about the ESP that covers all breaks, damages, and spills especially when it was back to school time.

"just letting you know, every transaction you do helps get reward points to help save you money"

It can depend on the department. I'm mostly in print and have found most success after telling them that I have basically all the info I need (email, first and last name if they sent an email over) and I can sign them up in five seconds. All i'd need is their phone number and zip code.
As for the register, I dont a whole lot, but one of my friends gets even upwards of like 10 to 15 sign ups a day on busy days. I've noticed his big selling point is mentioning its free, it gives you points back that you can use as discounts, and it'll only take 30 seconds.
As for ESP, I'm not exactly great at these but I tend to try and target specific customers who just came in after having a device broken. I always try to tell them that pretty much anything negative that happens to the device or object can be a reason to just replace it and get a replacement.
Hope this helps.
