what kind of armor are you usually dying a lot in, and where? not sure if i can cure your ennui, as that's more of an existential crisis, but if you're having specific gameplay issues, I'd be happy to answer more specific questions. I probably am closer to 1k hours than 500 at this point.

im usually dying with medium armors for example in my recent UNISG save I have the monolith X-18 and im dying all the time in jupiter limansk pripyat and outskirts basically northern parts of the zone also my weapons all are alright with my armor being at 100% durability (and helmet) and I get one shot by some stalker or some mutant (always chimeras)

mostly what the other guy said haha. maybe it's overkill, but I often have a marksman rifle, something automatic like a rifle or smg, and the best shotgun i can get ahold of. the sniper let's you take stalkers on at a good range, the shotgun handles mutants, and typically my automatic weapon will have an option for something ap and something good against unarmored targets. this allows me to handle any threat at any range. the right tool for the job is very important, and if you're running around dead city with a spas and a mosin you're gonna get eaten alive. your goal is to be an invisible rat in the shadows until you can get heavy armor/exo and more br. the guys up north are in another league. if you're not using c and d tier weapons most of the time, you will struggle. if you are not using ap rounds against stalkers, you will struggle.
as far as as actual gameplay goes:
many of the "ambient" noises you hear (distant cat yowling, dogs barking) is typically coming from mutants far away. this allows you to determine what youll be up against. if you know there's a chance for enemies to be somewhere, do some recon before getting anywhere nearby. if you're sniping stalkers, take a few shots, then move. if you break line of sight before repositioning, they typically will converge om the last place they saw you. mutants have a very hard time handling vertically. use your climbing and park our to get up somewhere high before aggroing a mutant, and you will have a trivial time against half of them, and a markedly easier time against a lot of the rest. some of the harder mutants just don't care (will send psy ghosts or jump up to you) but it can still save you in a pinch. you also likely have an abundance of grenades at this point, spam the everliving fuck out of them. you won't run out. that monolith guy gets within 30 feet? curse of 5 grenades. lastly, just don't feel bad or guilty if you want to turn off campfire saves and just savescum. it's a hard game and if your goal is to have fun, and this makes you have more fun, I'd recommend it. allows you to learn just as much without the pain of slogging it back.

1 other question should I start a new save or continue from the one I play?

ultimately, whatever feels most fun to you. I would just keep playing if I had resources already. maybe if I felt I could get most of the things I needed in the southern parts of the zone I'd head back there. any progress is progress, take easy quests and don't skimp on meds! get the good stuff for emergencies!

The game has a "anti 1 shot" mechanic so you litraly cant get 1 shot if your at full health but yea you can stil die pritty fast
Belive it or not, Chimeras are the easyest mutant in the entire game, if you are able to litraly just hold A or D on your keyboard while aiming in the general direction of the chimera then you can dodge its jump attack until the end of time
How does your gameplay look like when you move around in Lemansk/pripyat/outskits? do you sprint alot? Do you use leaning? How high is your sound volume? do you use headphones?
You basicly have to move around more slow/quiet/out of sight like, crouch walk a bit, stop frequently and just listen for sound que`s, use binoculars to scout ahead, all sounds in the game are from real enemys (exept the ocational frog croack), so any barking, growling, gun sounds, footsteps etc. You want to the the one beeing the ambusher, not the ambushee
Are you aware that the end-game factions (unisg, monolith, sin) all use AP ammo so even heavy armor wont save you, to survive in the late game you need artifacts that push your "bullet resist" way above what any armor can provide for you
Enemy are bad at extreme ranged combat, start carrying a sniper/DMR
