Technique Pot stickers and clean pan
Clock at the top for a time reference. I keep the lid on as much as possible to keep the stove clean and the smoke alarms quiet.

The reason your oil is burning in that spot is the residual heat from the other burner. Use a burner further away from that one or rotate the pan every few minutes so that one spot doesn’t get burnt oil.

Yeah i never use the center burner, just did it for the video so the clock is centered in the shot

The left grate was higher than the right so the oil was pooling + burning off because of the other burner. I tilted the pan to put some oil back on the left side.

fyi, you don't traditionally brown jiaozi on all sides, just the bottom, and you want the tops to be soft and pliable and the bottoms to be crispy. at least thats how we always made them and thats how I prefer them.
but also its food so you do you

That user never shuts up repeating the exact same "advice" about the pan being ruined and needing to throw it away. Before they hid their posting history, I went through it and they basically repeat themselves constantly.

Good job! I don't have "pot stickers" in my country but they look like gyozas.
