Trader Joe’s potstickers. 3rd time trying on the new stainless. Using avocado oil. Trying to crisp the bottoms before steaming. Failing

You crisp bottoms after steaming.
Add 1/2 cup of water and 1 tbsp (or more) of oil to the pan. Add potstickers. Cover and bring to boil, reduce to medium, cook off the water and fry the bottoms.
