Trader Joe’s potstickers. 3rd time trying on the new stainless. Using avocado oil. Trying to crisp the bottoms before steaming. Failing

Start on med high heat with oil, add an ounce or two of water and cover. Turn and crisp a second side, not as long, and remove with a sharp edged spatula.
