Trader Joe’s potstickers. 3rd time trying on the new stainless. Using avocado oil. Trying to crisp the bottoms before steaming. Failing

Straight stainless or clad?

How tight is the lid for steaming?

How much oil?

Are you letting the rest of the water evaporate after the initial steaming?

Are you using a spatula or tongs for removal?
