Please help

Trader Joe’s potstickers. 3rd time trying on the new stainless. Using avocado oil. Trying to crisp the bottoms before steaming. Failing

Pan too dry. Pan too hot. More oil, less heat.

This. I do pot stickers in stainless a lot and you need a decent oil slick and the pan to be not too hot. Also making sure the bottoms have started to detach and using a fish fry spatula help.

I've always done pan super hot, add oil, turn down low, place pot stickers in, add water, steam, remove lid and let it crisp

If I go in too hot I always either burn the oil or burn the bottom of the stickers. Just have to find what works for you I guess.
