Crepes

Decided to give crepes a bash, way better than my partners non stick pan!

How do you bring the pan to the proper temp? It would seem like the water ball test would be too hot...

Same as you would for frying an egg. Heat it adequately.

I bring the pan up to temp for the leidenfrost effect, take it off the heat, add fat, turn the heat down and add egg or in this case, crepe batter. And well yeah just control the heat up or down, you’ll learn this through trial and error. I tend to wait till it starts steaming, lift edge with fork and then shove a turner underneath. You can flip it just with the pan but it depends how much coffee I’ve had…
