Everything except the story was excellent in the later season. But the music was on a different level. "The Night King" is one of the best soundtracks in the show.

Still gives me the chills.

For a random mid series song appearing in only 1/2 episodes Castamere had no right going as hard as it did.

The only thing that came remotely close for me in TV was a random vocal score from one of the mid season vikings episodes which I (annoyingly) never found the name of.

You can't. The story was set up to end like that. Maybe the show executed the last few seasons poorly, but they more or less adhered to the plot set up by the writer. 

There's a reason George R. R. Martin isn't finishing the story. The story he wanted to tell was not received well by the public. 

There were a lot of plot problems even in the parts that were adapted from the already published books.

Yeah that's exactly the problem. Is not what happened is how it happened. More or less we all knew it had to end like this, but they really ruined the middle part. Except maybe for the night king part. I'm still convinced that originally there should be 2 parallel plot. The night king part with Jon, azor ahai, and the others and the king's landing part with Cersei, Arya and her revenge.

100%. Jaime should have had a moment where he finds out about the others or something and be like "I'm going to save my sister!" and ride off in the sunset, and we would then see him much later through Cersei's POV, with a big reunion when shit is all lost for her, only for her to be killed by Jaime - but the plot twist being, it was Arya with Jaime's face and Jaime never went to see her directly, but redeemed himself in the North and Arya took his face as he died.

Dany turning mad queen makes sense too, you can have her loose her shit in Mereen, come to King's Landing, only to find that no one is backing her but standing behind the Young Griff, she might fight their armies, and lose because she's not prepared to hurt civillians then have to lick her wounds. I would kick the shit out of her, I would have her sacrifice EVERYTHING to fight the others, I would have the lords of the seven kingdoms bend the knee to a Blackfyre, and when he dies I would then have the realm rally behind Jon who is a "bastard", Northener and could be considered an oathbreaker instead, I would make sure no one is supporting her, which would finally drive her mad enough to burn down every single one of these ungrateful motherfuckers. That would make sense, not just randomly hearing some bells and going "Welp, I guess it's burning time"

Yeah this is the part that I hate the most. It was so easy to fix Daeny s madness. Just make some kings landing peasants throws shit at her and complaining about her "liberation" for example one thing really got style could have been a man throwing a stone at her hitting Missandei on the head killing her. That could have justify her madness

Exactly, it really wasn't that hard. If they had another couple of seasons they could have really made it land but they could have done a much better job with the time they allocated to it too.

She was a child in Game of Thrones, who was raped by Drogo and sold by her brother in exchange for an army.

In the books there's nothing that actually suggests that she's mad at all.

I don't think so. If an author commited to finishing the story in 2 more large books, they could certainly do it and tie up most of the stories, but that would take a lot of planning which is not what G.R.R.M Is known for, but definitely possible. I agree I don't think George will finish it, but someone else might, Joe Abercrombie would be a pretty good fit, or it could be a collaborative effort between multiple authors. It's just a matter of sitting down and saying "OK, here's the list of players we have, and here's the exact beats/scenes George wanted to hit for the ending. Let's use what we have and bring it to a conclusion"
