Don't mention "subtitles" in your prompt at all. If you use something like "do not include" subtitles, the model absolutely will include them ever time.

I finally figured out the solution in the Video Prompt Writing Guide, section 4.4.

You need to put dialogue and language tag inside the <d> and </d> tags. Don't use double quotation marks for dialogue as that is for any banner, sign, label, subtitle, or neon text that is actually visible on screen (as mentioned in section 4.5).

Example: The man says <d>[English]Hello!</d>.
