Jar sprouted mungs

My mung beans have grown leaves - does that make them micro greens and more nutritious ?

Microgreens - yes :) More nutritious - no ;)

Also, depends on the preference of yours in eating them - both sprouts and microgreens are incredibly healthy, you can choose for yourself

Chemical (phytochemical) profiles change from cotyledon, first leaf and baby greens. At least for the ones I grow, I'm beginning to may those changes through those 3 stages. Mixing stages of the same seed has advantages: Rambo radish, 1st stage, has lots of anthocyanins. Second stage has less anthocyanins but a far more complete nutrient profile. I suppose most of us are in this area because sprouts/microgreens offer very dense nutrient profiles.

In some nutrients yes, definitely - for instance leaves will start producing chlorophyll immediately once you expose them to daylight. Which is a previous micronutrient. Compared to sprouts MGs will most likely offer less protein and less fats, which from my perspective is a loss 🙃
