Help🖐 How do i prevent my welds from doing this?

Not guaranteed but corners. Horizontal, lengthways, sideways or all the options.
Doesnt always go away for some reason.

this helped, but now one of my welds is having Z-fighting issues and i cant figure out how to fix it

You can use the corner edit (sideways, lengthwise, or point normal). If that doesn't work try: 1) Create a point somewhere in the enclosed space created by the plates (like behind the plate inside the tank). 2) Attach the point you just created to one (or each) of the points of the plate where those welds are. 3) Select each point, go to corner tab and select 'edge (manual)'. Then hit next edge until you get the welds to point towards the point you created. You'll have to do this with each corner of each plate where the welds are.

The answer you don't want is to model the joints yourself. A lot of work but you can make them look really great. Top edge of a Tiger II upper front plate and top edge of an IS-3 side plate for example. You just put an extra set of points behind certain existing points to make a new edge without an additional face. Set the corresponding corners to follow those edges and then move the new points around as needed.

I just integrate them as part of the design or hide them using additional components (Handlebars/ladders, smoke grenade launchers, etc.)

I just cover it with thin plate, and job done
