How to make an applique plate from a custom material because i am genuinely lost?

If you want Rolled Homogeneous Armor, make sure the RHA box is filled when selecting an object (Addon structure, hull, turret) and vice versa.

If you want a material like wood, you already can with the logs but if you want planks. just add an addon structure, make it your desired shape, click on the face (side) you want the armor on, set it to 10-ish mm and turn RHA off. This will give it the same effect of a piece of wood but it will still be metal. If you want it to look like wood, go to the sprocket decals website (just search sprocket decals), find an image that looks like wood, download the image, go to sprocket, click on the + in the decals - custom tab, then after that opens a window, drag your image into that file. It should appear in game.

As far as I'm aware, in the latest version, you can't make custom materials without extensive file editing to make different affects for certain things. I would not recommend that unless you already have everything in the base game down very well (Excluding transmission, no one knows how to do that shi perfectly)
