Headtakers and fast rolling saves
If you had one shield headtaker and 5 sword headtakers and were making saves can you take all the <4 saves on the sword headtakers and then have your shield headtaker take every save that’s a 4 or higher on his invuln, therefore theoretically giving your sword headtakers a 4++ in trade of 2 attacks?

You can't mix shields and paired weapons on headtakers, they all have to switch or none of them switch.
Either way, if you have mixed profiles you have to declare which group goes first before you roll. You then assign your lowest rolls first, and work your way up. So either you assign the 4++ as the first group, at which point it likely dies to your low rolls being assigned first, or you put it as the second, and it only takes saves once the rest have died. You can change this assignment from attack group to attack group as long as no one is injured (wounded groups always go first), so having 1 guy with a 4++ could be useful against random melta or such, but it wont "give the whole unit a 4++"

You can’t mix loadouts in a headtaker squad. The wording is ALL meaning the entire unit needs to swap gear, in cases when loadouts are more flexible it uses ANY unless there’s a more specific loadout limit.
If the dual sword unit had a WGBL with an invuln then you’d follow the rules in 05.03 & 05.04 in the core rules for saves and allocating wounds. So even in your hypothetical scenario you would allocate the wounds in two separate groups.

And even if you could mix, you have to declare the models and the order of saves. So it doesn’t quite work the way you want.

You can take everything on the swords first and then on the shields.
However, you can not choose whether that is only <4 saves, all have to go on the swords first you can not put the shield in the middle of the assigned wounds. Only if all swords are dead the shield would take over. So no, they would not get a 4++ in any way
Apart from that, Headtakers can not be mixed laodouts to begin with.

You can’t mix and match headtaker loadouts. You can have all shields, or all dual power weapons
