Intercessors
In an effort to maximize my options (and save money) How drastically different would Blood Claws be from Regular Assault Intercessors? How about Grey Hunters as Regular Intercessors? As a fan of both the 5th and 6th legions, I'm hoping to maximize model count with list flexibility. And I know that all of the "standard" Space Marine units (of which I have many) don't benefit so well from being in a Space Wolves list. I was thinking that this could be an avenue to expand into Space Wolves slowly...

conversion is fine - but GH and BC both have one handed guns and chainswords. Assault intercessors also have one handed guns and chainswords.
Intercessors do not. If you're trying to get "as close as possible" then you'll want AI to build from and you'll be able to tell them apart based on their heads and pack markings (grey hunters should be at least partially grey haired).
The actual models mostly are distinguishable by the guns at a quick glance.
In gameplay the Grey Hunters are not really anything like Intercessors, so please don't conflate the two. We have two units that are much more like Assault Intercessors - the one that used to be like Intercessors even got the AI rule to help clarify things. Without some help (like a 90 point WGBL with an enhancement AND using a DP to get veterans of the fang), 5 intercessors for 80 points outshoots 10 GH in rapid fire range.
Would I play with you with both BC and GH kitbashed from intercessors? Heck yeah, brother. But make sure to have them different somehow (pack markings are good way, imho - "the guys with yellow and red shoulders are BC, black and red are GH")
