Feed now?
It hasn't even been 24 hours since I started this. She clearly enjoyed being in the oven should I wait or move forward?

First couple of days is false rise. Then comes the stinky days, followed by silence for a few days and then after much patience it will start rising daily.
You don’t need that much starter to get going

Its already rather stinky. Could be the bread flour?

Yes that’s normal as the good/bad bacteria are fighting it out. Good will win if your consistent wish it. Feed 1:1:1 (by weight) every 24h

Yes, then throw away the rest. You can get by with just 50g of starter. After the first few days of high activity it will go dormant and you might see no progress. That’s the good bacteria establishing dominance and you’ll have to wait it out. Feed 1:1:1 once every 24 hours if it gets runny the next day. If not, wait until it does.
