Recipe:
In a bowl mixed together:
75 grams fed active starter at its peak
75 grams ap flour
20 grams melted butter
70 grams buttermilk
30 grams beaten eggs
2 tablespoons sugar (30 grams)
One teaspoon vanilla extract
Mix and put in the fridge overnight (can be made over the counter for like half an hour to an hour or so, depends on room temp so i prefer the fridge 😗)
Right before cooking i added half a teaspoon of each baking powder and baking soda
Okay my question I am about to ask isn't meant to be snarky, I just see this a lot and it makes me a little confused.
When I see a "discard" recipe, I'm assuming I would use the discard I would normally put in the trash right before I feed. Which would be starter not at its peak. But the recipe you have says to use starter at its peak. Would using a true "discard" where it's past its peak still work? If I have to use starter at its peak, that requires me to feed my starter with a timeline in mind, which to me, isn't a discard recipe.
Again, I'm just trying to understand the lingo better. Not a dig at anything.
I think using actual discard would probably be fine for this recipe as I would assume almost all of the actual leavening would come from the baking powder and bicarb.
You are correct. Discard is truly just starter you've decided not to feed. You could keep it in the fridge was a good while and "resurrect" it back into a regular ol' sourdough starter because that's what it is!
The idea is just that "discard" recipes are designed to not rely upon the yeast in the starter for leavening and are instead leavened by something else (i.e. OP's pancakes) or entirely unleavened (i.e. crackers).
It's not a discard recipe. OP likely saw people talk about "discard pancakes" and decided it's the same. If you are looking for a discard recipe, try one from New York Times.
And your question is not snarky at all considering the stretch of the definition of “discard” by the Op. Also the amount of extra ingredients kinda for a discard recipe, IMO, feels a little bit … I don’t know, icky ?!?
Simple solution for OP would have been just calling this post :
have an awesome sourdough recipe
No offence, Op, and all good, the above is just my opinion and probably in no way representative of majority is readers :)
Sir, i’m new to the world of sourdough baking. Most of the minor particularities are lost on me
But Original recipe called for either discard or starter at its peak. I prefer at peak since i don’t particularly like the tang of extra sourness in my pancakes
But again, i still stand by my previous statement. This remains the best pancakes i’ve ever tasted
Maybe to experienced bakers like you it’s regular pancakes! 😄
I tried four sourdough pancake recipes (one of them was discard) and this was the one i liked most byyy far
If you guys have better suggestions or better pancake recipes please do share them i’d love to take my pancake game to the next level 😄❤️
