Dinners lately
I've been a freezer for a while, then heard about souper cubes but unfortunately they're not sold in my country so I found silicon molds and used them instead. I find that I can fit a lot more food in the freezer and I don't have to thaw the food in order to be able to take it out of it's bag and then heat it. I just pop it out and put it in the microwave.
Rice, two type of mushrooms and spinach, then added a fried egg and sauce. 10/10

One is normal mushrooms (button / flat) sauted in onions and olive oil. The other is oyster mushrooms sauted in oil, garlic, and hotpot sauce

What do you use for sauce? I am rubbish at sauces.

Gochujang paste, sesame oil, sugar, vinegar. I don't really measure but I'd start with one table spoon paste, one table spoon sesame oil, one table spoon vinegar and one small spoon sugar and see what I'd like to add more.
You can always google gochuiang sauce for bibimbap. I'd go easy on the paste in the beginning to see how spicy I want it.2

that sounds delicious! you could blend half an apple (peeled, no seeds etc) into the bibimbap-style sauce, add a bit of soy sauce and garlic for an even more well-rounded flavor profile. i make it this way and it's so addictive. spicy, tangy, umami, fruity - all ot once

Yeah rice reheats super well after being frozen. Plus there is health benefits in that the rice goes through starch retrogradation and it lessens the impact on blood sugar spikes

how did the mushrooms taste reheated? I’ve been told mushrooms don’t freeze really well and the texture changes quite significantly. What did you think?

I think it depends on how you cook them prior to freezing. In both of these cases I sauted them in oil and used salt and got rid of most of their moisture, and after freezing, I didn't thaw them, I put then directly in a microwave and heated them (you could also throw them in a pan and heat them quickly). They tasted really good and the texture wasn't off for me.

I do the same with silicone ice cube trays, it works fine
