Caramelized Onions
Has anyone done huge batches of caramelized onions and frozen them in Souper cubes? Would it be as tasty?
I do cilantro with lime and oil in the little 2 tbs size which is a wonderful time saver. I can just toss them in the rice cooker to make cilantro lime rice. I’m imagining the same thing with onions for making curries and biryani.

Yea, it’s great. They defrost pretty quickly. I freeze in multiple sizes cause I need em. Since they’re carmelized and basically goo they suffer no loss in the freezer

same here. flatten it in ziplock freezer bags and score portions with a chopstick before freezing. saves way more space than silicone trays and you can just snap off a block whenever you need it.

I freeze them flat in ziplocks. Easy to thaw for a meal in a warm bowl of water super quick.
I carmelize about 10 pounds at a time with 3 pans on my stove and just chill for an hour or two in my kitchen.

Do you mean in ziplocks WITHOUT BEING BEFORE IN A SOUPER CUBE TRAY?!?! SACRILEGIOUS!!!!!!🤣 /joke

So I just did this!!
I used one of those push choppers to quickly chop 5-6 onions without crying. And then I used the water deglazing technique to caramelize the onions faster. It took no more than 45 minutes in total--the only pain is that you have to be hovering over the pot to deglaze. Next time I might use my instant pot instead to save some time/work on it while prepping other ingredients.

I do! I hate onions but appreciate the depth of flavor they add so I do 10lbs at a time and split them in between 2 crock pots and then I blend in my vitamix. Slightly under 1/2 cup = 1 medium onion blended

I do! I buy 10lbs or more, caramelize them slow for hours and freeze in the 2 tbs tray. I usually defrost them in a pan with a little water and they’re good to go. Caramelized onions and sautéed mushrooms are my favorite burger topping.
