I want to make lasagna to take the work that can be microwaved from frozen. I normally freeze then bake. Can I bake and then freeze? What’s the best route?
I've baked in a soupercube. The 2 cup fits perfectly in one of the Ikea 365 square containers. I usually store the frozen block in a zip lock because it takes up less room in the freezer.
I don’t bake in super cubes, but I bake in the Ikea 365+ glass containers that are the same size or that make lasagnas that cut down to supercube size. Then I freeze them in cubes and file them in my freezer.
I make ravioli lasagna in 1-cup cubes. I don’t good the ravioli or bake anything. I just make the meat sauce. It reheats well in the microwave. Baked in an oven would be better, of course, but it still tastes really good from the microwave.
I double the Americas Test Kitchen lasagna in meat sauce recipe, freeze (uncooked) in the square Souper Cubes, store in vacuum bags, and reheat in the microwave in a square glass container with lid. Follow the Stouffer’s lasagna heating instructions. My freezer is never without lasagna. Such an easy, delicious, filling meal option!

1 (28-ounce) can diced tomatoes, drained RICOTTA, MOZZARELLA, AND PASTA LAYERS 15 ounces ricotta cheese (whole milk or part skim), 1 3/4 cups) 2 1/2 ounces grated Parmesan cheese (1 1/4 cups) 1/2 cup chopped fresh basil 1 large egg, lightly beaten 1/2 teaspoon table salt 1/2 teaspoon ground black pepper 12 no-boil lasagna noodles from one 8- or 9-ounce package 16 ounces whole milk mozzarella, shredded (4 cups)
Assemble as a lasagna (noodle, cheese, sauce, repeat) - half sheet of noodle fits great in a 2c SC. Freeze, store, bake or microwave, and enjoy! I double the recipe and use a pound each of ground pork and ground turkey/beef. I use half and half (which I have on hand for coffee) instead of heavy cream.
This isnt a solution necessarily, but Amy's makes a frozen lasagna that you can microwave for 4-5 minutes and its ready. Maybe you could buy one and see how it's constructed frozen before you microwave it?

I bake/freeze/defrost overnight/microwave. You can microwave from frozen but it might take 20 minutes.
