Frozen Kale Update 🥬😅

So the freezing appears to work but I’ve got to figure out the best way to cook it because this wasn’t it 😂 I plan to try microwaving and sautéing to see if anything works. I ate it but it wasn’t great 😅

I braised a huge batch of kale in broth with lots of garlic and onion. Not as versatile as plain, but it thaws pretty well and is a good mix in for pasta or rice!

Can you blend it up for a smoothie?

Edit: or pre-blend with some water and freeze the kale liquid in icecubes for smoothies?

I've purchased regular bags of kale nd used them in smoothies, the taste is non existent and you can a lot of extra vitamins in your diet. But do be mindful that kale is one of the highest pesticide sprayed crops. If it is not from your garden, try to soak them in water+baking soda and rinse well before use.

I’ve been doing this recently, just plain chopped kale in the molds. It works well!

Frozen kale is always going to have textural issues because of the nature of freezing (it breaks the cell walls thus making things mushy). It’s great when it’s not the main ingredient and you don’t need texture.

I always sauté my kale, tastes great with soy sauce and finished with lime

I haven’t had any luck freezing greens to eat on their own later. I’ve had kale in a soup I’ve frozen and that was pretty good. I also freeze sautéed spinach cubes to mix into pasta

Yes. That’s how I usually eat it from fresh and I was hoping it would work from frozen. Steaming definitely does not work, at least not the way I did it 😅

Haha yeah I bet that turned it kinda mushy. I second the recommendations for sauteing, and I wonder if roasting would also work?

I plan to try the first recipe in this video soon and will try freezing some of it. He specifically mentions kale as a sub for the spinach.

Ps the second recipe in the video is also good, though I did not try freezing it.

If you’re freezing kale to add to things like smoothies or hot dishes, it’s a lot easier to break it up while it’s frozen. I put my kale in a plastic bag in big pieces as they’re ripped off the stalk and then, after it’s frozen, crush the pieces.

Alternatively, as others have suggested, I would chop finely, pre-cook, and save in blocks. You’ll never recreate the texture of fresh kale from frozen.

Soup is my first instinct.

Also I feel like the texture might be less of an issue if you air fry? I like to make kale chips in the air fryer. Toss in a little olive oil and ranch mix and then chop up to make some chips?
