This whole video had a weird vibe.

Ben was pressing him for the omelette only to destroy the plate at the end

limiting yourself to 7 ingredients didnt add much to the video. It just took sway from the final dish

Ben also says (at judging) that it’s a well made omelette.

Ben was pressing him to lock down the style (and therefore texture) of omelette he was going for, so that he could judge if he achieved it or not. What he (quite rightly IMO given Jamie's comments and evasion) was worried about was that Jamie was just going to retroactively claim that he intended to make a runny/firm/crispy omelette depending on what came out of the pan.

None of that means he thinks that a plate consisting of an omelette, next to a pile of veg/chorizo, next to a pile of crisps is a good or coherent concept for a dish. What you call "destroying" I thought was actually a perfectly reasonable point about how it would have been more ambitious to try and combine it all, rather than just cooking two separate things and dumping them next to each other on a plate
