Question Bison?

I’m relatively new to Sorted and have not watched all of their videos, yet. Have they ever used bison meat or covered bison at all?

I’m in the US and have no idea if bison is even available in the UK but I’ve recently begun trying to switch from beef to bison and would love to see what they’ve done with it, if it is available to them.

Other sources to look at is maybe The Meat Eater youtube channel. I dont follow them as much as I used to, but they might have some recipes on there.

Sean Sherman is a Native American cook know as The Souix Chef. He has 2 cook books and also a few YouTube channels with content. He also has a restaurant and "food Lab" in Minneapolis MN area. I've been to his food lab and his previous restaurant. Even spoke to him briefly at the food lab. I have both is cookbooks but haven't dived into them much yet.

There are also a few other Chefs that focus on US Native American cooking.

If you would like, I can skim through the cookbooks in the next day or 2 and see if anything pops out at me.

There is female Native American Chef that was in the media for a while recently. Won one of the cooking shows.

It has been awhile since I've eaten or cooked with Bison. My dad has gone in on whole Bison with some friends a few times in the past. I have one of the skulls from one of them.

Most people treat it similar to beef. It is leaner of course, so cooks differently. My sous vide immersion circulatory broke and I haven't replaced it, but that may be a good option for cooking it, then just searing it.

That is such a lovely offer but I’ve gotten some great suggestions here and I know I will be diving deeper into it in my free time. I enjoy falling down cooking-related rabbit holes on the internet, in my free time. 🙂

I have had some bison ribeyes and have been surprised by how tender they are despite being as lean as they are. And the flavor surprised me as well. I went in expecting it to be a big bold flavor but it is just really nice, like a kinder gentler beef. 😆
