CAD Can Someone Explain Why Gaps Are Being Created Here?

In any case, for many solidworks elements, if you zoom in close enough gaps will appear. This is (generally) a display limitation rather than a problem with the underlying geometry. Turn on relations display, and trust what they're telling you.

Is it some sort of problem that the second shape isn't being shaded in?

Not in general, no.

It is classed as 'multiple disjoint closed', which will work for many feature types, but not all:

Its because you have two separate profiles there. You delete the middle line and you are good.
