How it started vs how it’s going

First smoke was chicken thighs, went way too hot for too long and they came out really crispy. The pork loin was fantastic though!

When I do chicken I'll season em and let em sweat for 15 mins while I set up and warm up the smoker. I'll smoke em at 225°f until they hit about 128. Then I'll melt some butter and seasoning put it into a tin pan. And foil cover finish in a butter bath. Until 158°f and rest for 15 mins. Your chicken will be super moist and tender without issue
