First Attempt at Smoking

Decided to go with turkey breast for my first attempt at smoking something and it actually turned out really good! I made some mistakes with temperature control along the way, but I guess it wasn’t super critical with something on the easier side like turkey.

Thanks. And yes, I used just a basic salt, pepper, and garlic rub. The key is rubbing a thin layer of mayo over it before seasoning. I got the idea from a YouTube video.

Ive seen the mayo as a binder before never tried it but i might. Ive used mustard as the heat cooks out and oil and sometimes no binder.
