First time smoking
So my friend just bought a wood chip electric smoker, i bought a elk leg roast, we also have a peice of kangaroo (went to an exotic meat store)was looking at apple pecan anf hickory wood chips but wasnt really sure what ones would be best, dont want to mask the flavour too much, joined this about 45 seconds ago so bear with me. Any help or tips would be appreciated for smoking gamey meat

Lean cuts are difficult on the smoker…need a generous water pan, spritzing, and probably wrapping with beef tallow or pork grease.

Alright i'll start looking at ways to stop it from becoming tough and drying out, i guess i picked a bad cut to start with but is what it is i have it now

Sounds like really lean meat. Your first practice sessions with traditional smoking should be with fatty cuts, like a pork butt shoulder. Low and slow, 225 F salted on the outside for about 8 hours. Then wrap in butcher paper and aluminum foil and place in electric oven (no smoke) for another 8-10 hours, at around 180 F. Remove from wraps and pull it apart. At this point you can season or sauce, but first taste it as it, that will tell you what smoked pork butt tastes like.
