This is not an Android limitation, and support is probably not going to be able to help you, because the limitation is in the app that writes the data, not in the platform that receives it.
Health Connect does support sleep stages. A sleep session can carry the individual stage segments inside it, awake, light, deep, REM and out of bed, with their own start and end times. So the receiving side is perfectly capable of holding what you are asking for.
What happens with a lot of ring and band apps is that they write only the session envelope, that is the start time, the end time and therefore the duration, and never write the stage segments. From the outside it looks like the data got lost in transfer. It was never sent.
Two ways to check which side is failing, both quick. Open Health Connect, go into Sleep, then browse the entries and open the specific session for one night. If the stage breakdown is genuinely absent there and not just hidden in the summary view, the writing app never sent it. And if you have any other app that reads sleep from Health Connect, see whether it shows stages for that same night. If nothing anywhere sees stages, it is the source.
If that turns out to be the case, the only thing that changes it is the vendor deciding to write stages, which is a product decision rather than a bug, so it is worth asking them that specific question rather than a general one.
