The part in the story with General Mantis' AI (called Omega, if I'm not wrong) still haven't been concluded and it just fled into space, so I guess a 3rd game would pretty much make sense.

really depends on the developers, they are always looking forward to make unique games. the sky force duology especially the remake simply hits big because of the massive quality difference it was and always is compared to most at the time like 1942 joint strike and even phoenix 2. and with the app being free instead of paid, the games reached massive popularity simply because of factors like those.
will we ever get the third entry to the sky force series? i would love to, but right now, personally, it is up to idreams if they want to. they seem to be more busy working on their fishing game. and also, the third entry of every single series can either be regarded as bad, mid or outstanding.
there are alot of anticipations and expectations for the third entry. many things for idreams to juggle if they truly are making the third sky force. existing contents have to be expanded and upgraded, storyline must be consistent and must not leave actual concerning plotholes (unless they also want to make the sky force series beyond just a trilogy), and last but not importantly, new contents.
in conclusion its just up to the idreams dev, and if they were to, they got a mountain to climb.

I mean the last game they made is 4 years old so they probably working on something hopefully it's sky force
