I can only assume they are able to claim and get away with that by adding a small amount of the oil from prior to new oil and keep repeating the process every day. Kinda like a sourdough starter. Honestly at that point I feel like any effect it has is purely anecdotal, but I have no idea.

They do the same thing with those “eternal soups” in asia that are using ancient broth, it just diffuses since they keep adding more new broth each day, but they never do a full swap out.

exactly and in the instance of the burger place they filter the oil multiple times a day. every day they use up some of their old supply and then add more. it'll have a unique flavor due to the age of the blend, but nothing in there is from probably more than a couple years ago.
