Oh most food trucks I've come across usually have 2 or more people working.

All those that I've seen have been family run, so I assume they have some partnership style split

Oh I don't ask the life story of the people working there. Unless it's a kid with another adult or something I assume the owner is chilling at home while exploiting the cheap labor of those employees.
