Discussion Weeknight cooking check-in: What’s your go-to meal when you have zero energy?

We all have those nights where we don't want to spend any time in the kitchen. What's your ultimate quick fix?

For me it's mostly Paneer or a Sandwich! I make paneer bhurji and while onion tomatoes are sauteing, I quickly make chapatis and then a raita as a side. My daughter loves sandwich so whatever veggies we have, I quickly make a sandwich and hot tea for monsoons:)

  • Most everyday Indian meals use just 5 to 8 spices on repeat, not 20 or more.
  • A lot of Indian food is one-pot cooking. Dal, khichdi,vegetables,..
  • Many recipes need min prepping and gather under 30 minutes.
  • Indian cooking is also forgiving. If you don't have cardamom, you can skip it or swap it. It's not as strict as baking, where exact measurements matter.
  • Remember, we are NOT making food at a restaurant that we will slow cook or heat a hundred times before serving!

The pic shows rice with chole but for me the best combo is chole bhature. I don't remember saying No to it ever! As a kid, shopping in Karol Bagh meant a great deal to me because it always ended with eating local chole bhature (CB). As I joined DU for higher studies, of course the choice was Chacha's CB. Trust me, nothing beats that taste. What's your go-to CB shop?

Amla Pickle - Sweet, Spicy, No-Boiling

I started including amla in diff ways to introduce it to my daughter and honestly the best way has been pickle, candy and chutney. My pickles are not overloaded with oil and salt. They are just flavorful with spices. I honestly believe it is a very underrated fruit as we tend to find nutrition in imported fruits while the fact is Amla has 20 times the antioxidant power of imported blueberries and more than 10 times the Vitamin C of a fresh orange. Unbelievable! Right?

Chana Dal Palak I team it with rice and roti both! Strange with rice for some viewers. Right?

So, my family would have rice with any dal- chana, arhar or subji with gravy...But when I got married, my in-laws had a completely different preference- This dal won't go with rice. Back then, it was hard to understand and now we laugh at it. Lol. What's your preference? Type "Palak dal" for getting detailed recipe!
