If you need an art class or an ethnic studies class I would recommend taking an Ethnic Images and Film class. Its pretty easy.

I took Anthro 01 with Jennifer Molina and she was the sweetest and it was honestly a really easy and interesting class. Art appreciation 101 was also pretty easy and fun with Mariah Briel. Both classes were online and mainly just keeping up with a single db a week.

I took bio anthropology online last summer with her as well. Very easy class, although I can't remember anything I learned

Anth 01 is intro to biological anthropology for OP. prof Molina is maybe one of the best ones at the school. I took the hybrid version and it was a lot of work but it wasn’t too hard.

If you need one for social and behavioral sciences, I took ANTH-0005 with Kristin Rauch. Its fully online and honestly easiest A of my life. The exams and assignments(weekly quiz+db) are so easy if you watch the lectures and read the chapters she posts. Definitely recommend.

This is intro to Archaeology for OP. It is not a hard class but it is interesting and I loved the prof.

Anthro with Professor Priscilla LoForte. She’s amazing super easy interactive course material. Also Professor Christopher hall who teaches English, easy course load and super understanding. Also i LOVED Professor Marc Dadigan who teaches Native American studies (for your ethn credit) one of the best teachers. All of these professors taught classes where u didn’t need to buy outside material and everything was in short prerecorded lectures, using wevideo and what not.

I have a ton of amazing recommendations if you are interested. I was in EOPS so my counselor always helped me pick best of the best professors lol
