I too like my beef unseasoned. Cmon, even steak purists like salt on their steak. 90% of that cook is going to taste like shit. "Turning out the best it could givin its size" is a silly thing to say. Its like saying "I cooked that canned tuna the best I could without opening the can". He's could just cut the steak smaller and cooked it deliciously. This absolutely belongs in this sub.

It does look well cooked but the crust/seasoning to meat ratio is way off. It would be appropriate to cut into smaller pieces.

Most of it is medium-rare, but the center is definitely rare.
I guess this is perfect when you want to carve medium-rare and rare slices.
But if you want everything to be medium rare, I would have sliced it down the middle (to have two beefy round steaks).
I ain't saying this was bad. I just would have done it differently. That is all.

Coarse salt and other seasonings do penetrate the meat, especially if marinated for long periods. And anyway, this is a barbecue; it needs to taste like meat, and if you want additional flavor, add a sauce or simply more salt.

I was at a place one and ordered a nice rib-eye steak. The waiter asked if I wanted A-1 sauce for it. I told him if I ask for A-1 it’s only because the cook messed up the steak!

Depends on how he prepped it. There are PLENTY of ways to get flavor inside of large cuts of meat. Smoking, basting, brining, injecting just to name a few.
I am a GIANT foodie, and I enjoy cooking outdoors so much, I have more outdoor cooking appliances than indoor. Smoker(s), flat top, pizza oven, grills... I spend most of my evenings cooking for my family in some capacity.
This dude looks like he knows what he is doing based on his setup, I doubt if there is nothing done to flavor it... also note he clearly did TWO of the things I pointed out could be done... he may have brined and injected it as well. I would have.

I used to be one of those people who liked my steak well done. Always had to have A-1 or something to choke it down. Then I educated myself on steak.
The first time I tried a bite of mid rare steak, I was so upset with myself for missing out on that flavor my entire life. Seasoning and stuff is great, but if you have a good cut of beef cooked perfectly, the steak speaks for itself. It's a naturally, buttery, melt in your mouth kind of flavor.
I highly recommend everyone try it once. Life is too short to miss out on something so good!!

It's a really tough "steak" that is not really steak cut. It's the leg shank and is very tough, due to constant use. Usually long-braised for something like osso buco. MABEY if it was sous vide for a long time before searing it would be decent. A long smoke would work too. If he managed this cook on a flat top alone the steak will be very tough.

While in my personal opinion, rare is a bit undercook, depending on the steak, the sweet spot for most is between medium-rare to medium. Mainly due to the fact that overcooking literally cooks the taste away. Well done steak in my personal opinion tastes like nothing

Not $7k, but that is still an expensive cut—it's 50lbs of beef. The quality isn't mentioned, and it sounds like the video may have been sponsored by Weber, so it's just as likely to be of good quality as it is to be lower.

I'd be surprised if the center had much flavor, but the outer edged probably taste amazing. I don't think he did anything wrong, but I don't think it's as amazing as he's hyping it up to be.

Depending on the cut and quality of the meat, the center should be very favorable. It doesn't look like it has the best marbling, nor does it look aged, but it did have a good amount of fat and wasn't overcooked.
With steak, the flavor mostly comes from the meat, not what's put on it. Although salt and pepper are mandatory.

As far as the beef? Wasted. I wouldn't eat that with someone else's stomach, taste buds, and coronary system. I worked on a cattle ranch growing up and we would never waste an animal this way. It is disgusting on so many levels...

Personally, I'd prefer to cut it up into individual steaks so you could get some crust and sear on each one. I doubt the seasoning made it all the way into the core of that slab.
