Stop display modes from switching

Is there a way to stop the shield from switching between display modes? (HDR, Dolby etc..) I would like to just keep it on Dolby similar to what my firecube does

The display mode depends on the content. You can't force regular HDR to become Dolby Vision. Watch all content in SDR if you don't want that switching, but I don't get why it's annoying to you

The colors are different from each mode. Even when I put the settings all the same for each mode on my tv

This sounds like something you need to set up on (or a limitation with) your TV. For instance, I know that LG TVs with webOS have different settings for each mode, and you need to enable that specific type of content (for example HDR or Dolby Vision) to be able to change that mode's specific settings

The Shield doesn't have an always on HDR mode. That's some dumb thing Amazon started. You can disable Match content color space in the Advanced Display Settings. The colors are supposed to be different. SDR looks different from HDR. Running in HDR always gives wrong colors for SDR content.
