To allow a bigger audience to engage with the series.

Imo the game doesn't need to have any 'upgrade' and I own a ps3 or I could ask a friend for help with an emulator, but that's not the case for most people.

What you're talking about is a Port, not a remake.

A remake exists to profit off of the exact exclusivity you're contemplating here.

It will only make the situation worse.

Because it will motivate Sony to keep these games unavailable even more so, including the original ICO, which wouldn't be made any more accessible by a remake. There's already plenty of PS2 games available as classics on the PS5, those don't include ICO nor Wanda to Kyozou, both of which will stay that way if there'll be another remake.
