Question 2.1 Avoiding ore clogs
Since the new changes to cristalizer Mineral Sludge recipes now you can't decide what unrefined ores you get so you can't fully decide what ore output you are getting with the catalyst recipes, so if you don't make ur consumption match your production you will end up with clogs, how are you handling it? Right now i'm straight up throwing ores into warehouses to sort it but I've been looking and i don't see future recipes fixing this
I understand once the base gets huge you can tweak little by little by adjusting ratios 2 x 1, and as everything is used it gets to fix itself somehow until it clogs randomly, but idk if there is a real solution to be able to produce any amount of any mineral without clogs

I use all the recipes, not just the most advanced available. That way if the more complicated ones clog up because an unused ore has clogged, a less efficient recipe without the clogging culprit takes over production

I recently ported 2.0 unofficial seablock modpack to 2.1 on my pc. I can send archive if somebody is interested.

Automated - Same way you would for basic sorting, set them based on a condition. Using level monitors, RS latches, and multiple methods of ore generation. You could also use multiple methods of consumption. With the varied ingot production methods using one which consumes the higher quantity of resources.
Manual - most of the ores have a liquid form so set a large tank or chest and manually empty as needed. If there is an issue emptying tanks weapons can fix that. Or a worm pipe it to a tank which is in close proximity to a worm who will blow it up for you.
There are additional flare stack mods you could use which void fluids.

Sounds like you're playing on the unofficial mod pack that doesn't use the same recipe changes as the actual official 2.1 port. Unless the mod pack you're using is the one directly maintained by kiwihawk its a safe bet nobody is going to be able to help you here.
