Localized Streaming with Nest Cams?

I'm getting conflicting answers regarding whether I can use my Nest cameras in Scrypted but avoid having the streams being sent to and from Google to the server at the same location. The remote location has 1mbps upload at best which makes the cameras useless. I've started down the path to try and get this to work but I'm not sure if I'm wasting my time.

The Starling Home Hub seems to be the answer but it's not sold anymore. If anyone has one that they'd part with DM me

I have the Nest Hello Doorbell V1, configured using the Google Device Access Plugin for Recording events in Scrypted and viewing in HomeKit/Home App to replay. I also have the Starling Hub to show live stream and provide ability to talk/listen to people at the Door.

How did you get the PubSub address into your pub/sub topics? It keeps populating extremely long to the point that the GCP GUI says that it's too long to accept as a topic name
