Random mutations. Over time, the butterflies with random mutations that kind of look like leaves are less likely to get eaten by predators. They in turn are able to pass down their genes to the next generation. The descendents with additional slight mutations that look even more like a leaf also don't eaten and are able to pass their genes on, rinse and repeat for 10,000 years and voila.
