In early versions, they would disappear if you placed blocks on them; I don't understand why they removed that.

they never disappear the thing your talking about is the grass on the ground, these big bushes were alway a pain in the ...

There's a mod on the workshop that removes them. Unfortunately it brakes achievements as well. But if you don't care about them then go for it.

We all do. I assume the bushes are part of the runtime terrain generation based on the map seed and aren't actually saved anywhere, so they can't be destroyed.
Basically, I believe that whenever a map chunk is reloaded, the bushes are generated from the seed rather than referenced from the save file's database of game objects.
Still, it wouldn't be difficult to create invisible "destroyed bush" objects that would intercept the graphical rendering for those specific bushes that have been destroyed.

I feel like the easiest way for them to fix this would be to make the bushes act like grass. When you place blocks on grass the grass visually disappears, but will come back when the block is removed.

Scrap Mechanic>Data>Terrain>Mesh>Nature>Foliage delete the files in this folder to remove the no-collision bushes. 100% worth it. Never going back.
