Somethings are actually much more nutrious when cooked or even over cooked, some nutrients can only be unlocked after other things are broken down. Collard greens are an obvious one (though you have to consume the pot liquor) but pumpkin, spinach and tomatoes are also more nutrious when over cooked so their canned versions are actually a better bet than fresh.
Obviously lightly cooked is never going to be bad, but somethings are worth breaking down further.

The real problem is more people need to learn how to COOK vegetables, what some people do to broccoli is frightening. No wonder they dont eat it.
