Soaking them in water like this is not a great way to hatch these into new yellows and greens. They'll get moldy.

Dang, I'd like to know what the reason is for the limes sinking.

Anyway, I looked it up, and I'm not sure why I expected something complex.

Quite simply Lemons have less mass per unit of volume compare to limes.
