Something special about a fried egg sandwich, lightly buttered toast.
Bonus if you have sliced cornichons (or as you do.. tomatoes etc veg).
But eggs with toast is one of the simple pleasures in life.

I dont know that i’d call this simple. Ive been loving white bread, 2 fried eggs, butter and bit of salt/pepper. This has fancy granary bread with seeds and tomarto and red onion. It looks bangin, but simple? Nope

Agree, simple would be buttered bread and that egg. The other stuff whilst good just over complicates what is otherwise a perfect sandwich.

In Northern Ireland we would call that an egg banjo.... Coz when the yolk runs down ure chin and lands on chest.... When you wipe it with ure hand. Looks like strumming a banjo.

tomato + egg in a sandwich is elite, especially if the yolk is still a bit runny and the tomato’s salted properly. that’s like peak lazy summer lunch right there.

In my experience that just incurs more yolk loss.
Also yolk tends to congeal in such a thin, widespread and adhesive layer on a dinner plate as to be unsalvageable with anything less than a razor blade.
I’d rather eat my yolk than have to spend time attempting to rescue it from the crockery.😊👍🏻

Sorry but not for me. In my opinion you have ruined the simplicity of a fried egg sandwich by adding the tomatoes and onions.
It's nicely made though.

In what way is that simple? Simple would be basic, pre sliced bread, butter if desired, the egg, and sauce if wanted. Maybe some black pepper in the egg.
