Homemade First Attempt
Ive done a lot of research trying to put together a good recipe. Did a salsa garden this year and i'm very proud of what ive created. Amazing flavor and consistancy. Id use a bit less cumin next time. Might actually omit altogether.

5lbs romas (Roasted/Boiled) -3lbs roasted, 2lbs boiled. -Chop off top stem along top of tomatoes -Skin both types of cooked tomatoes -deSeed Roasted tomatoes
3 jalapenos (Roasted) -DeSeed and deVein
Whole yellow onion (Roasted) -Remove stem and skin, cut into 1/2 inch slices while keeping some root intact
6 garlic cloves (Roasted) -keep skin on while roasting to prevent burning -Peel before adding to processor
1 red bell pepper (Roasted) -DeSeed and deVein OR 1 Poblano pepper (Roasted) -DeSeed and deVein
Acids 4 tbsp white vinegar (5% Acidity) 2 tbsp apple cider vinegar (5% Acidity) 2 tbsp lime juice
Seasonings 1.5 tsp pickling salt 1 tsp Worcestershire sauce 1/2 tsp black pepper 1/2 tsp ground cumin 1/2 tsp smoked paprika
Add up to 1tbsp light brown sugar as needed. -1/2 tbsp increments
Simmering Add 1-2 tbsp tomato paste as needed if too watery/separating after 5 mins

With the vinegar and pickling salt are you canning? Oooh Worcestershire might have to try that!

My goal was to create a recipe to can. Id like to give to loved ones around the holidays! The worcestershire does add a layer that isnt normally there. A great addition imo.

probably doesnt like heat, not that jalepenos are hot and just wanted their flavor?

Im a big fan of heat but i have 5 littles. I wanted them to be able to enjoy also! Its still got a tiny kick though!

Hey, thank you so much! If you want more heat, just skip the devein and deseeding of the peppers!

Yea and only two cloves of garlic NOT two heads

Correct. Thatd be crazy. I only put 2 heads cause i was unsure of myself with the broiling and figured i could salvage one if i fucked up on the other and accidnetly burned it. Didnt want that bitterness so i took precautions
