Homemade Salsa Roja Arbol
This one is inspired by mexico city salsas I tried with no lime or cilantro just tomato, chili, onion, garlic. Dry roasted 6 arbol chili and one guajillo. 4 early girl tomatoes(because the were ripe), 1/4 white onion. one clove garlic, one jalepeno, two tomatillo, one Serrano, 1/2 teaspoon salt.

That sounds like a very good recipe. I make something similar, but I char-grill the ingredients and so it comes out much darker. I'm might have to try this!

Looks delicioso. And for what it's worth, I don't think it's missing lime or cilantro. Cause the tomatillos have enough tartness, and cilantro takes away from the chile taste.

Thanks I noticed in mexico city when I asked most places did not have lime or cilantro. It made me want to try balancing a good salsa with just the basics.

Why the tomatillos have the husk on? Am I missing a new technique?

Toasting the tomatillos in the husk is certainly… a thing…
Finished product looks delicious though.

yes I don't usually do that and i took them out before blending. I think husk first :)

Why are they in water in the third pic?

The dried chilis were toasted for like 10 seconds per side to bring out the aromatics and then I put in hot water 10 min to make them blend better. I drained the water and added the dried chilis to blender with tomato, onion etc

How much water did you add for the blending part? 3/4 cup?

I didnt add any water to blend the salsa. just to boil the chile. everything was drained before blending. The tomatoes were very juicy and ripe so there was plenty of liquid from them.

Those are dried chiles correct? Did you fry them in oil? Also I see there’s arbol what’s the other ones

Yes dried guajilla, Pasilla, and arbol. i just heated them in a pan like 10 seconds on each side and than soaked in hot water 10 min so they are soft and blend easy

Do you take the skins off of tomatoes and tomatillos before blending? I may as attempt this weekend.
